Hi Friends!

Hi friends! I’m Stacey, a mid 30’s native Virginian, girl mom and military wife. Our family is beach loving and pretty much majority girls (my poor husband is totally outnumbered!) which is how we came up with Riptide and Ruffles. We spend as much time as we can at the beach (or wishing we were at the beach) and our loveliest memories together are near the ocean.

I have two beautiful girls, a french bulldog, and a very tall and handsome hubby! I love milk glass, anything copper, coffee, wine (cheers!), fun food, my essential oils, running, and beachwear (Lily Pulitzer dress worn by me can be found here).  I love cooking, creating, and DIY. I am a former graphic artist and a current photographer and NOW blogger!

I love life, people, experiences, and I love and adore my family!

Gluten Free Pancakes

Good morning friends! I haven’t shared this yet, but I am gluten free and have been for over eight years. Through the years I have experimented with different recipes of some of my favorite foods to make them gluten free. I miss bread and bread-like foods sooooo much! I was a total carbaholic before discovering my gluten sensitivity. One of the things I miss dearly is eating a delicious pancake breakfast. So, today as I was making pancakes for my kiddos (it’s a snow day here in Virginia) andI thought I would make a few for moi! Here’s how they turned out…

Make sure to follow the recipe below and add your favorite add-ins to mix it up a bit! You could really add anything to this recipe to change it up. I made mine with a few chocolate chips and fresh strawberries on top. They’d be devine with bananas and chocolate chips, peanut butter chips, chopped pecans, or even blueberries! Bon appétit!

Below are some of the ingredients I use as well as my absolute FAVORITE silver dollar pancake flipper! I couldn’t live without this tool. (It is actually just a small cookie spatula)
